As promised, here is the first meal I made for my husband when we started dating.  I chose this recipe because I knew it would impress.  It’s so simple to make yet different enough to surprise anyone.  He was skeptical about the cinnamon & pasta combination . . . but that skepticizm was quickly replace by the desire for a second and third helping.  Yes, it’s that good.  The combination of cinnamon, pancetta, and bacon add a warm smokiness to this dish that takes it up several levels from your standard rich, creamy carbonara. 

A quick disclaimer: this is not a light dish.  It’s just good, cold-day comfort food.

Here’s what you’ll need for the sauce.

Note: If you can’t find pancetta at your grocery store you can just use bacon.

For those of you that arent familiar with carbonara, it’s just a combination of parmesan cheese, heavy cream, and egg yolks. Yum!

All you need to do is combine the eggs, cream, and cheese and set aside until the pasta is ready.  While you’re waiting chop and cook the bacon.  When it’s nice ‘n’ crispy, sprinkle it with the cinnamon. 

Tada! You’re ready to toss it all together for the best fall meal you’ve ever had . . .

Note: if you’d like to add a little more protein, you can add some chicken to the recipe.  Just cook it in the same pan you used for the bacon for extra flavor.

It’s not impressive to look at, just a giant bowl of pasta goodness that’s guaranteed to wow! Remember, I have proof . . . we’re married now. 🙂
